Sea Bass on a Bed of Stir Fry Spinach with Lemon Coriander Sauce

Two fresh fillet of sea bass, skin side marinated with black salt, black pepper, mango spice, then turn over flesh side sprinkle with turmeric and chilly spice. On a hot non stick pan pour some mustard and curry leaf oil skin side down for five minutes on medium heat, until lightly crisp then turn over leave it on very low heat not to over cook fish.

For spinach get a sauce pan pour some chilly and garlic oil making sure pan is hot add half tea spoon of cumin and black mustard seeds, chop two diced shallots one fresh chilly diced along with one teaspoon of fresh grated ginger add rock salt tea spoon of butter, three curry leafs add some fresh spinach leafs stir on heat for a couple of minutes till reduces and garnish off with fresh coriander.

For lemon and coriander sauce available at Bilash, heat saucepan add jar contents in pan stir till reduces no need to add any further spices or herbs, once sauce thickens add olive oil over sauce till you get a silky sauce.

On a large plate pour sauce, over the sauce put the fish flesh side down then over the skin rest the spinach on top. garnish with sprinkle of coriander and wedge of lime.
